Strawberries:
New Twist on a Summer Favorite

Juicy
bright red strawberries are one of the joys of summer. These
days, everbearing berries are available right up until fall,
extending the season for favorites such as strawberry shortcake
and fresh strawberry tart and giving cooks the opportunity to be
creative throughout the warm-weather months.
You
don’t have to limit yourself to desserts, though. Mill
Valley chef Tyler Florence served grilled sandwiches filled with
mild, creamy cheese, strawberry preserves and fresh berries at
the Mill Valley Wine and Gourmet Food Tasting Festival in 2009,
and they were a big hit, drawing the longest lines of the
day.
Unadorned fresh,
sweet berries at the peak of perfection with tart plain yogurt
and granola make a healthful and tasty start to the day, and you
can even use strawberries in salad. Branch out and make the most
of California’s bounty in the following recipe for salad
greens with strawberries and almonds. For the best, most
flavorful ingredients, visit a local Farmers’ Market, where
you can find most of the ingredients and make shopping an
adventure.
Gourmet
Greens with Strawberries and Balsamic-Honey
Vinaigrette
Serves
4
Salad
4
large handfuls of gourmet salad greens
1/4
cup of slivered California almonds, toasted at 350º F for 8
to 10 minutes
1
basket of strawberries
1/4
cup goat cheese, crumbled
Wash
greens and dry thoroughly, and put it into a salad bowl. Slice
the strawberries lengthwise, and add them to the lettuce. Add
dressing, and toss gently to combine all ingredients. Add almonds
and cheese, saving a little of each for garnish, and toss
lightly. Serve on chilled plates; garnish with the remaining goat
cheese and almonds.
Dressing
1/3
cup olive oil
1
tbsp. balsamic vinegar
2
tbsp. liquid honey
2
tsp. Dijon mustard
1
tsp. fresh oregano, chopped
Salt
and pepper to taste
Whisk together
vinegar, honey, mustard, salt and pepper. Add olive oil in a
slow, steady stream, whisking constantly. Gently stir in
oregano.
